About producer: Parigot & Richard has been a prominent producer of Crémant de Bourgogne for five generations, specializing exclusively in these exquisite sparkling wines. Situated in Savigny-lès-Beaune, with vineyards spanning both the Côte de Nuits and the Côte de Beaune, the estate is now led by Grégory Georger, who continues the family tradition with meticulous care. The winery remains dedicated to the traditional Méthode Champenoise, employing hand-harvesting, gentle pressing, and fermentation, as well as hand-riddling to ensure the highest quality. Parigot & Richard’s commitment to these time-honored techniques results in Crémants that are refined, elegant, and distinctly reflective of their Burgundy origins.
About wine: “With beautiful aligoté grapes in our hands, we wanted to pay homage to this charming Burgundy grape variety and give free rein to our savoir faire, by creating a cuvée according to our desires, off the beaten track. Quartier Libre, a pure and direct cuvée, with an assertive indigenous character”. The grapes come from the Côte de Beaune, the heart of Burgundy, and the vines, planted in soils rich in lime and clay, are between 20 and 50 years old. The grapes are sorted by hand, first cluster by cluster, and after vinification, the beautiful Aligoté crémant matures for 18 months on the lees - just like a quality champagne. And since the regulations only stipulate a minimum of 9 months for crémant, it's a big deal that Parigot doesn't jump the gun, but rather lets the yeast and time work together.
