About producer: Benoît Déhu is the eighth generation of a family of hereditary winemakers. All production is located in the village of Fossua, in the western part of the Vallée de la Marne sub-region, where marl and clay or clay-limestone soils predominate and where the main grape variety is Meunier. Benoît Déhu is one of the most famous winemakers in Champagne today for his ingenious work with this variety. He has a total of around 5 hectares of vineyards, all of which are certified organic and where Benoit applies the principles of biodynamic viticulture. Annual production is around 35,000 bottles.
About wine: This is Benoit's signature wine. Made from 100% Meunier grapes from a biodynamic single parcel of old vines in Fossoy, it is aged in barrels mostly made from trees from the surrounding forest. The grapes are fermented in oak with indigenous yeasts, aged under cork and bottled without dosage.
